Sweet Potato Latkes




I adore Latkes, but wanted to make something that had a bit more nutritional kick so decided to try sweet potatoes since they are loaded with fiber, B6, Potassium, Vitamin A and low in Saturated Fat and Sodium. My two friends were skeptical when I mentioned this plan, but devoured all of them. 

Makes 9 Large Latkes
  • 1/2 sweet potato baked
  • 1 large sweet potato with skins
  • 1/2 cup grated onion
  • 1/4 cup all-purpose flour
  • 1/2 tsp. salt
  • 1/4 tsp. ground black pepper
  • 6 tsp.  oil, divided

Combine 1/2 sweet potato purée.
  • 1 Shredded sweet potato.










1/2 Onion.






1/4 Cup Flour.











1/4 tsp. Pepper.











 1/2 tsp. Salt.











Shape into 1/4-inch-thick patties.













Heat nonstick skillet over medium-high heat.

Coat pan with 2 tsp. oil.











Add 3 patties.











 Cook 5 minutes; flip, and cook 3 minutes more, or until browned on both sides. Drain on paper-towel-lined plate. Repeat with remaining oil and patties.










                  Serve with Yogurt/Sour Cream, Apple Sauce, and whatever greens are in season.
